Spinach with Cashew Cheese

The first question people ask me when they find out I am a raw foodist is, “What do you eat? Just salads?” There are so many delicious recipes you can make from raw foods — cakes, cookies, parfaits, and even pizza.

In spite of the stereotypical salad perception, I’ve decided to share one of my favorite salad recipes. From this recipe you’ll see that even a salad doesn’t have to be ordinary.

Spinach Salad

1 1b of Spinach
1 tsp of cold pressed extra virgin olive oil
pinch of Celtic sea salt
pinch of Herby (frontier seasoning blend)
Massage together with hands

Cashew Cheese

1/2 cup of cashews (preferable soaked 30 minutes to 1 hour)
Pinch of Celtic sea salt
1 very small clove of garlic (or 1/2 a regular clove)
4 leafs of fresh basil
Juice of half a lemon

Pulse dry ingredients in the food processor. Then, add lemon juice and process. Add cheese to the top of your spinach salad, and sprinkle a tablespoon of sundried tomatoes on top!

Makes 1-2 servings

    I really want to try this; would love to see some more recipes. I am not so crazy about raw Spinach though.

    To be frank, the first post timed out on my side; i thought the post was not made. So i submitted it a second time. Doesn’t matter to me if you leave it there; just looks a bit silly two the same posts.

    Although you will be delighted to know that I tried the recipe in your blog and it was really nice, even the spinach was not to bad after all (considering i do not like spinach at all).

    It would be great if you could add some more recipes here; i really like that.
